Dough Preparation
Our dough is the foundation of every great pizza we serve. Each morning, we begin the careful process of preparing fresh dough using a traditional recipe that has been refined over generations. We use high-protein flour, filtered water, fine sea salt, and a natural starter that imparts subtle complexity to the flavor profile.
The dough undergoes a lengthy fermentation process, typically ranging from 24 to 48 hours. This extended fermentation develops the dough's structure, creating a light, airy interior with a beautifully crisp exterior. The natural enzymatic activity during this time also enhances flavor, resulting in a crust that tastes as good as it looks.
Each pizza begins with hand-stretched dough shaped by our skilled pizza makers. This manual technique, rather than machine pressing, preserves the delicate air pockets created during fermentation and allows for the characteristic irregular, rustic appearance that artisanal pizza is known for.
Sauce and Toppings
Our signature tomato sauce begins with San Marzano tomatoes, prized for their sweet flavor and low acidity. We carefully select these tomatoes and process them with minimal intervention, allowing their natural characteristics to shine. The sauce is seasoned simply with garlic, oregano, and a touch of salt—no sugar, no preservatives, just pure tomato flavor.
When it comes to cheese, we use a premium blend of whole milk mozzarella and aged provolone. The mozzarella provides the classic melt and stretch, while the provolone adds depth and nutty complexity. For our specialty pizzas, we incorporate other authentic Italian cheeses such as gorgonzola, ricotta, and parmesan.
Our toppings are sourced with equal care. We use Italian sausage from local butchers who follow traditional recipes, premium pepperoni made with natural casings, and fresh vegetables delivered daily. Each topping is selected not just for flavor, but for how it complements the other elements of the pizza. The result is a harmonious balance where no single ingredient overwhelms the others.
